A Bowl Full of Cherries

I don’t know what the phrase “life is like a bowl full of cherries” really means but this past Saturday had a bowl full of cherries in it and it was lovely so I have to think it means good things. I watched Forget Paris and mindlessly pitted cherries and was left with the best problem: what do I do with this beautiful bowl of summer?

Answer:

crisp
and cocktails.

I consulted Gwyneth and Shauna and merged their recipes to come to the final, healthy, delicious cherry-apple crisp that I just polished off for lunch.

4 cups of cherries/apples/fruit you love
1/2 lemon, squeezed for juice
1/2 Cup Almond Meal
1/2 Cup Quinoa Flakes (I used Arrowhead Quinoa & Shine cereal because I couldn’t find flakes)
1/2 Cup Oatmeal (I used gluten free)
1/2 Cup Maple Syrup
Drizzle of Olive Oil
Cinnamon or Chinese Five Spice

Toss the fruit with lemon juice and arrange in a glass pan. In a bowl, combine the almond meal, quinoa flakes and oatmeal with the maple syrup and spices. If the crumble isn’t coming together, add the olive oil. Spread over the fruit and press it down so it cooks together; bake at 375 until the crumble is crispy and the fruit is bubbly- 45 minutes or so. Eat plain or top it with Greek yogurt or ice cream.

I also made cherries for cocktails because old fashioneds. Cherries, half a cup bourbon, a squeeze of lemon juice, 1/2 cup water and a cup of sugar. Boil then simmer for as long as it takes to reduce to a lovely, boozy syrup.
