Something that must be added to the Labor Day weekend post…The J.Parker. I met a girlfriend for drinks there last night and was greeted by this view of the sunset. It was breathtaking and felt like the absolute best place to enjoy such a stunning evening. Our conversation was punctuated with “Can you believe this sky?!”, “What a gorgeous evening!” and “The moon! Look at the moon!”. Summer nights like last night are like unicorns- you can hardly believe it’s real and all you want is to figure out how to capture it, replicate it.

Hope you’re having a fantastic weekend and are squeezing out every last drop of summer.

After a successful (and fast, might I add) Elvis is Alive 5k, it was time to sit on the grass, drink a 312, listen to an Elvis tribute band and mutter repeatedly “How gorgeous is it out tonight?” because it really, really was.

High five to Fleet Feet Sports for putting on another great race- these people know how it’s done and the Elvis is Alive 5k is one for the books.

Summering: Grilled Pizza

Last night was a night for friendship, a night for food, a night to hang on to every last ounce of summer left- a little summer soiree, if you will.

I got the idea to do make-your-own-grilled-pizza from Hollywood Housewife and she was spot on!

I could NOT be more pleased with how well this turned out.  Everyone chose their own toppings (the spread included artichokes, sundried tomatoes, pepper, onion, chicken sausage, arugula, basil, mushrooms and mozzarella), we took the elevator down to the sundeck, threw them on the grill and drank wine until they were done.

How To: Grab a piece of naan (FYI: naan from Whole Foods is round and perfect for little pizza crusts AND comes in whole wheat and garlic flavor), brush on a coat of EVOO, top with whatever you want and put it on the grill for around 8 minutes or until everything melts.

It was great because everyone got to eat what they wanted and an interactive component to a dinner party was a fun way to mix it up/make things less formal.  Perfect for our girls night.

Oh and the Strawberry Summer Cake didn’t hurt either:

U2 at Soldier Field

The 360 set was unreal, the music was amazing and the energy coming from the 65,000+ people in the crowd at Soldier Field was unbelievable.

And when U2 played “It’s a Beautiful Day“, I fist pumped with the best of ’em.

It was one of the best concerts I have ever seen on one of the most beautiful nights of the summer in one of the coolest venue around.

Mad love for U2…and Chicago, per usual.
